With the polar vortex and more than 40 inches of snow so far this winter we’ve been in need of some comfort food. My favorite is a sandwich my mom used to make for me when I was a kid – peanut butter, cheese, and egg sandwiches. These sandwiches are for all seasons because you can eat them warm or cold – great to warm you up on a cold day or to pack for a school lunch or picnic. And they have TONS of protein. Really, tons of protein; more than 20 grams in one sandwich. MMMMmmm.

I know what you’re thinking – ew. Yeah, even I admit it sounds pretty gross, but I swear it isn’t.

I made two sandwiches so I used peanut butter, 2 slices of American cheese, 4 slices of bread, and 2 eggs.

Spread the peanut butter onto the bread. Personally, I like peanut butter on both pieces. Slap a slice of cheese on there and close up your sandwich.

Break your eggs and beat them. The dip your entire sandwich in the egg; turn it over and make sure it’s covered in egg (just like making French toast).

Coat your pan with cooking spray or a little butter and toss your sandwich in. Cook for just a couple minutes and flip.

All done! Super easy and super fast. Eat while hot or refrigerate for later. I prefer them warm.

For easy snacking you can cut them up into tiny sandwiches. I find these really convenient for snacks for the kids, packing a lunch, or for a quick meal for myself on days when I barely get to sit to eat.

A friend suggested bacon might make these even better and I agree. I’ll be trying that soon!
